cute little personal pizza.
i’ve been on a brie cheese kick. being so creamy and rich, i melt it anywhere and everywhere i can in meals. then i saw these personal pizza crusts at the grocery store and was reminded of those fancy little pizzas at restaurants, ones with toppings resembling an elaborate pasta rather than the takeout classic. i’ve always wanted to try one of those but let’s be real, no one’s ordering the tiny pizzas at those restaurants. but an at-home 10-minute lunch? this is as gourmet as it gets!
convenience crust
i found these 6-inch crusts at my local grocery store, but this meal is flexible to any type of crust! i prefer thin crust pizzas in general, and the one i found nearly resembles a flatbread. it’s giving appetizer. but feel free to use a thicker crust, or even make your own dough for a more filling meal. i like the convenience of this one; it only takes 10 minutes in the oven! as one person, it was the perfect size for a light, mid-day meal.
i’m gonna keep it real with you: i’m not italian nor am i knowledgeable enough about their cuisine to make this an “authentic” pizza. i just used the cheapest, most normal-looking prosciutto at the grocery store lol (story of my grocery shopping life). if you have any recommendations, please let me know! for a hint of green i used some torn spinach leaves. arugula could work here too! right before popping it in the oven, i like to sprinkle some mozzarella to fill in the cheese-less gaps. rule of thumb for any dish i make: the more cheese the better.
what to serve it with
the prosciutto and brie are quite fatty and salty, so a sweet jam like apple or fig would create a harmonious balance! if you prefer your sweetness with a little more tang, try a drizzle of balsamic glaze instead. since this is a sauce-less pizza, using a jam or glaze will bring that juicy texture back. i even considered baking it with slices of apple. i’ll give it a try next time and let you know if it’s a serve or not.
how-to:
prep work — preheat the over or airfryer according to your pizza crust package. while it heats, assemble the pizza. start with the prosciutto so the fat melts into the crust first. then the brie, spinach, and mozzarella. place on a flat oven pan with parchment paper for easy clean up.
cooking — the crust i used said to bake at 400°F for 10 minutes, but i found it only needed 8-9 minutes. just keep an eye on it while it cooks to be safe! the cheese should be fully melted; the brie may even be bubbling.
serve — drizzle balsamic glaze on top and dig in! or, cut into fourths and spread some apple or fig jam on top for each bite.
one-serving prosciutto brie pizza
Ingredients
- 1 personal pizza crust
- 18 g prosciutto
- 1 oz wedge of brie cheese
- few leaves of torn spinach/arugula
- 15 g shredded mozzarella roughly a handful
optional:
- apple jam or balsamic glaze to serve
Instructions
- Preheat oven according to pizza crust package.
- Tear the prosciutto into tiny pieces and arrange to cover the surface of the crust. Slice brie thinly and layer atop the prosciutto. Tear a couple leaves of spinach/arugula and tuck in between the slices of brie. Sprinkle shredded mozzarella on top.
- Pop in the oven and bake according to crust instructions (mine says 10 mins at 400°F).
- Enjoy as is, or top with apple jam or balsamic glaze!
